There's a misconception here. An smartphone is not a portable photo viewing device and you will sooner or later corrupt the memory. It is a portable internet browser.
What you need to do is upload and host your photo on a decent photo-sharing website like Flikr or a paid-for one like PBase, com which I use, and then you can 'view' it at whatever resolution suits.
If you want to do it via a computer then use photo editing software (GIMP is good and its free, or Irfanview is more basic but capable). You set the photo to the screen size of the phone.
If your Canon camera has Wi-Fi, use it to transfer photos from camera to iPhone. If not, transfer the photos to your computer by USB or SD card reader, then transfer to your iPhone using iTunes (using USB cable) or with the Transfer Pro app.
Remember, viewing photos on an iPhone doesn't take advantage of the full resolution of the photos. An iPhone is a low resolution viewing device.
