Well, It depends on the app. If the game is run on gamecenter (like you have to have a gamecenter account to play it), then yes the app will. Other then that there's a pretty unlikely chance that the game data would save unless you back up your device to your computer (not the cloud!) and click restore from back up (But you will lose any other data on your device that had been added since).
