Can you use an old iphone as an itouch/ipod?
I have thousands of pictures and musics i took and downloaded on my iphone 5s. My dad want to get me a new phone for my birthday, is it possible to still use my old phone as my personal itouch/ipod?
Sure.
Yes it will function essentially as an ipod since you are turning off the data for it and then you can use it how you like.
