If the headphone socket is deleted then you'll need to use Bluetooth solutions. As Apple own Beats you can be sure that if they do delete the headphone socket they'll either bundle some free Bluetooth 'buds or will include a Lightning to headphone socket adapter which likely won't allow charging at the same time and offer a separate range of Bluetooth 'buds and headphones at extra cost.

I hope they do lose the headphone socket. It restricts the screen size, limits how thin the phone can be, adds the requirement to include a battery-munching headphone amplifier and is often a source of unreliability and warranty claims. Losing it will encourage manufacturers to develop better Bluetooth solutions or to produce Lightning socket compatible headphones/earbuds. They can then include their own headphone amps which could result in improved sound quality instead of relying on the one-size-fits-all amp built in to the phone at the lowest possible cost.

First off the iPhone 7 isn't even out yet.

& as far as doing that, just like all previous iPhones plug it in to charge & use it as normal. Go to Music app & play music.
