When you did the "restore backup" application through iTunes, did you edit the selections of items you wanted to restore in the iPhone menu options?
Try it again, but this time choose the option to not put any music on your phone, and go into the videos, tab/menu and see if you can select only the specific video that you want. You should be able to fit it on your phone as long as it is the only thing on the phone.
