How to turn of the disable iPhone thing when you put the wrong password in?

You don't. There's no user-defined setting for this.

It is a security feature to stop brute force hacking into the phone. It isn't something you can disable

Usually it will reset automatically in a little while if you just leave it alone. Stick it your pocket for an hour and then try again.
