Nope, I tried it before. CoC is linked up to a server that keeps everything in sync. If you actually do find a cheat that adds gems, it'll probably refresh and keep your gems the way that they were before.
If you can, you can look around for a private server that you can make, and somehow link your CoC with it. But that wouldn't work because your account won't register with the server. Therefore, not making it possible to hack.
