What are ways to hack an iPhone with out touching the phone(wirelessly or Bluetooth).By hack I mean. Get all the information from the phone into yours, and/or being able to change the settings(wirelessly).

You can't? There aren't any wireless protocols that support any kind of configuration like that out-of-the-box.
Now if you can get certain apps installed, you're in business.
Look for parental control apps and the like. Utilize social engineering to get them to install the app/trojan. There's truly NO other way to do it.

Code a program in c++{learn it at cplusplus.com } then add it onto the internet with I gui database. Somehow get them to get it on there phone.inside the database there should have been the program then you can access and change all there stuff
