Can Apple see everything I view such as pictures, videos, vines, tweets, etc on my iPhone 5C?

No. That information is saved to the phone itself. Apple only cares about your media such as apps and music and they do not keep track of anything except your downloads through itunes. Sure you can save stuff to icloud such as contacts and your photos if you choose so but they can't see what is there.

Why would they be able to do that?

Apple doesn't care. Besides if anybody does see it, it would be the NSA and your carrier. But they don't get the images. Just the URL's and stuff. Only time Apple knows what you are doing is if you use iMessage. That stuff goes through their servers and not your carrier's towers. Still it's data and not images. Again, don't break the law and nobody really cares. Best luck.

I don't think so.

Not Apple, but your phone carrier could or where ever you connect on the internet.
