Yes you can since they use GSM in Italy. Just make sure your iPhone is carrier unlocked first if you're bringing it in from another country.

You can, but if you are using a CDMA iPhone (Verizon, Sprint) it will charge you for roaming, which is really expensive. But if you have a GSM iPhone (AT&T, Unlocked) you can use it in Italy.
