Can I use hotspot on my iPhone 5s without my service provider knowing?
I have an iPhone 5s with sprint and I have an unlimited data plan I want to use hotspot without paying extra for hotspot and only getting a few gb is there a way to use hotspot with my data and sprint not knowing that it's hotspot
No. Even if the hotspot is listed under your settings ( and I doubt it) they'll notice how much data you are using and how it's unusual to your previous usage. They'll throttle you back and send a nice reminder. If it's not already in your settings you'd have to add it and they'll know anyway. Best luck.

So he said "Well, I'll keep your phone, and I'll call your mother and me and her can go through it together." I don't think he has a right to go through my phone anyway.
