Changing sims in an iPhone 4?

My iPhone is unlocked, when I change to a Spanish sim will I need to re-install any apps or will everything on my phone remain the same. Will I need to change my whatsapp account?

No you do not need to reinstall your apps
(or at least you should not - but take a good back up anyway!)

iOS 4 and earlier - you need to put in your new SIM and connect to iTunes
and iTunes/apple (so you need internet also) validate that it is unlocked
(and as far as I know you have to do this every time the SIM changes and changes back)

iOS 65 & and later - once you connect the phone (with new SIM) to iTunes once,
it is unlocked forever, and will chaneg SIMs without hassle forever more.

What's APP is connected to your phone Number,
so if you change Phone numbers, it will change -> you need to update WhatsApp
(can they have more than one number?)
though once validated on your old Phone number it 'may' continue to work on your email address (I guess try it and see with a new UK SIM/phone number- basically it has to change from your normal one) - interested to see what happens, as not tried it.

facetime/imesage is connected to your AppleID (which will not change)
