The most you can do is Parental monitoring apps, if you have no computer programming/networking background. If you do I can provide other methods.
Parental apps typically allow the monitoring of texts, photos, installed apps, and other insightful information. Snapchat even has one that allows you to see incoming/outgoing photos and chats, but I'm pretty sure that one would be hard to hide.

A few years back, a woman hacked into her husband's phone because she suspected him of cheating. Turns out he was cheating, he then took her to court and successfully sued her for quite a bit of money. If you suspect your boyfriend is up to no good then dump him, it's much cheaper. Besides, you don't sound like the person who could hack as it isn't as simple as a few instructions.
Forget it. Unless you know his phone PIN, Apple Username and Apple Password then you can't. Even then you'd need to jailbreak his phone to be able to install totally covert spyware as that type of 'ware is not available on the Apple App Store. And even if it was, he'd see the billing for the app purchase.
Face it. If you don't trust someone you love then find someone you can trust instead.
