Honestly, it depends on the amount of free space on the iPhone itself.

At 4K 60 fps, with HEVC enabled (which is required for the mode) runs at a rate of ~400 MB / min (~6.667 MBps)… Which is roughly 2.5 minutes PER GB of space.

If you have the 64 GB version… That would equate to a rough maximum of 125 minutes (just over 2 hours), using 50 GB's of space.

If you have the 256 GB version… That would equate to a rough maximum of 600 minutes (around 10 hours), using 240 GB's of space.

HOWEVER, the actual recording length will vary since you're going to use some of that storage space for apps, music, pictures & other stuff.
