A 32GB iPhone can hold: about 6500 photos or songs, or about 1000 average-sized apps, or about six million (!) emails without attachments, or a couple of hours of high-definition video, or many more hours of standard-definition video. If you pay for 64 GB, you can hold more than double this amount.
Video takes up more space than anything else. Texts and emails take up the least space.
For comparison, 32 GB is roughly the equivalent of 50 CDs, and a CD can hold a complete encyclopedia. And 32 GB is roughly the equivalent of 13 million typed pages.
