How to convert a.pdf into a.epub that fits well onto an iPhone?

Today, I downloaded calibre ebook organizer to change the MIT guide to lockpicking to an iBooks format. I succeeded in converting it into a.epub file but there's only a few characters on each page formatted like this:

In the.pdf format it fit a lot of words but i had to zoom in and scroll weirdly within the page to read the whole thing. Any suggestions on how to format it so it is easy to be read?
(the conversion turned a ~50 page document into a 1705 page iBook)

EBooks must be in the ePub format to be transferred onto and read on an iPad. If you have a lot of PDF files or other non ePub formats of eBooks you want to put on your iPhone, you can a free converting program called Calibre to fix that problem. The steps are
1.Download and install Calibre. The interface is very slightly different in each version. This wikiHow uses images that were captured on a Mac, but Windows users should have no problem at all following along.
2.Find the PDF file you want to convert. The first time you run calibre it will take you through a quick setup. The first thing you'll want to do is set up your 'eBooks' folder. This is the location where you'll save your.ePub files.
3.Click continue. Then select Apple from the Manufacturers list, and iPhone/iTouch + Stanza from the Devices list.
4.Click 'continue'; then you will see the main calibre interface. Click the Add books button in the top-left corner of the window to import your PDF file into calibre.
5.Click the small 'arrow' next to the Edit Meta information and select Download metadata and cover files. Calibre will now download additional information about your PDF/ebook - if it can find it. If it's an eBook (as a.pdf), you may need to manually enter the book title and author name if it isn't present when you load it into calibre initially.
6.Click the small arrow next to the Convert E-books button. From the list that will appear, select "Convert individually". You will be prompted with a "summary" window prior to calibre making the final conversion. Click the OK button and wait for the conversion to finish.
7.Locate the folder from step 3 that you designated as your.ePub folder. Then connect your iPad to your Mac or PC, and launch iTunes. From the iTunes menu select File -> Add to Library… To import the converted.ePub file. The new.ePub file will now appear in the Books section of iTunes.
Select your iPad in iTunes and select the Books tab. After confirming your new.ePub book is listed, click the Sync button. And you're done! Enjoy your eBooks.
