You can't technically remove the songs from your phone without removing them on iTunes. However, you can create a playlist with the songs that you would like to listen to, and disregard the other songs you don't care for.

Emma is right and wrong. You can delete all songs on your iPhone while keeping them in iTunes.

1. Open iTunes with your iPhone connected. Select your iPhone. (Highlighted on attached picture near the top left corner)

2. Go down the column on the left and select "Music". (Highlighted blue in the picture)

3. In the menu at the center of the screen if you have "Entire music library" selected, select "Selected playlists, artists, albums and genres"

4. Below that, uncheck all Playlists. Note: if you don't have any playlists, you will need to select all artists and uncheck them, or use the simple method of creating a single Playlist and unchecking it.

Simple method to create a Playlist:

A. Click on the music notes at the top left of the window.

B. Select Playlists from the menu at the top center of the window.

C. At the lower left of the window, click on the +. Select "New Playlist" (you can rename it if you want.)

D. On the right side of the window that opens click on "Edit Playlist".

E. Use Command A (Select All command) and click and drag the songs from the left column into the box on the right that says "To create playlist, drag songs, or other items here."

F. Wait until all have been moved and return to the 'Device" window and go back and do step 4.

5. Now sync and the iPhone will have no music on it, but iTunes will have all of the music remain on it.

To use the music on another device (or to return it to your iPhone after a reset of its software), select the Playlist and check it. Do another sync and it's all back!

NOTE: That also can be used for each category in the left column under Music. Movies, TV, Shows, Etc. Can each be adjusted as to what if any goes onto the iPhone without losing any in the iTunes back up files.
