Once you upgrade your software there's no way to "downgrade". There might be a way to change it back to IOS 7 or use something like it by using jailbreaks. Hope I helped.
As of today, Oct 21, 2014, there's NO way to downgrade an iPhone 5.
During the life of iOS7 there wasn't a downgrade for ip5, so even once there's an iOS8 jailbreak I doubt ip5 will have a downgrade option.
