How to manually select a backup for iPhone?

I recently updated my iPhone 5 to ios 7 beta. I know for a fact that I backuped my phone prior to the update. When I go to restore from back up it provides me with a few that are not from the correct time or date of which I knowI made the back up. However, when they are shown in finder I do see the correct backup file with date and time in which I made it. That is the one i want and need with all my messages pictures and notes. However I can't select that one since iTunes does not allow me to manually select it. Any advice or information I'm extremely grateful for.

These are instructions on how to manually backup your iPhone using iTunes.

Step One
Launch iTunes from your dock.

Step Two
Connect your iPhone to the computer via the USB cable and select it from the iTunes sidebar or at the top right of the screen if you're using the new layout.

Step Three
Make sure you are on the Summary tab and click the large Back Up Now button.

Step Four
Notice the progress bar will tell you the status of your backup.

Step Five
Once complete the date and time of your last backup will be updated.

Step Six
To see all the device backups on your system select Preferences from the iTunes menu.

Step Seven
You can find the list of backups in the Device tab.

If you're running iOS 7, make sure your device's UDID is registered with a developer account through a site like http://www.udid.in/.It's $5, and then you don't need to worry about Apple disabling your device for running unreleased software.
