How to prevent iPhone from showing others you're typing?

I just got an iPhone and downloaded the most recent software update and was rather annoyed to find that when you're typing, someone else with an iPhone sees "… "

I'd really rather others not be able to tell when I'm typing. Is there a way to turn that off?

Go into Settings then 'Messages' then 'Read Receipt'. If you reply via BiteSMS (Cydia) then it doesn't show when you are typing. If none of these work I'm afraid you will have to get used to it, sorry.
