How to stop syncing two iPhones together?

I had an iPhone 4 and just got an iPhone 4s. The old one obviously gets no service, but I can still use all of my apps on it, so it's like having two iPhones. The problem is, if I delete a note on the old iPhone, it deletes on the new one as well. How do I stop that from happening? I want to be able to delete stuff from the old one without it being deleted from the new one. I want to wipe the old iPhone clean and put only my music and games on there. How do I do that? They're synced with the same iCloud and iTunes account, so how can I pick and choose what goes on which iPhone? Like I said, I want to wipe the old one clean and put only music and games on there without doing the same to my new one.

ICloud is syncing them. Disconnect the old one from your iCloud account. As for iTunes, you'll have to keep both connected.
