How to transfer music from Iphone 4 to a folder?

I can't sync my phone to itunes because it will remove all my music. How do i move them to a folder so i can sync my phone

Can anybody tell me that are the iPhone's lock folder i mean secret folder which are password protected, is there any possibility to access these folder remotely by the app programer, i mean to say that can the app creator steal or hack my private photos that i keep on these folder?
