If you're talking about your own phone number, then no. The phone number isn't stored on your phone.
Only your carrier can change your phone number.
You will loose any phone numbers from your contacts if they aren't backed up, though. I think that by default, if you're signed into iCloud, it backs up your contact's information, but it is a good idea to double check.
All your contacts are backed up to your iCloud account by default if you haven't turned the sync off. Factory reset without backing up will erase everything from your phone as iPhones doesn't have memory card. To make sure you didn't delete everything, Backup to your iCloud or iTunes and you can Restore from those after the factory reset to get back everything.
You can have a backup and then format it. In this case you will not loose the contacts.
