If i restore jailbroken iPhone 4s running ios 6.1.2, will iTunes update me to 7.0?

My device keeps crashing with evasion and winter board installed. The icons are not even there anymore, just in settings. I want to restore my 6.1.2 and redo the jailbreak, but iTunes says it will "install the newest version of iPhone software". I don't want to upgrade to 7.0, just restore the backup of my current os.
On a side note, any advice on the best free jailbreaks or ios7-themed mods are greatly appreciated!

Get ipsw of whatever version of iOS you want, then restore it with iTunes by option clicking restore (shift click for Windows). I like this site for ipsw: http://www.ipswdownloader.com/
Note: If you have iTunes version 11 or above, it will not let you downgrade it.

If your device is compatible with iOS 7, do upgrade it. I thought I would hate it when it first came out, then started using it from beta version, and they are really good. I know you have doubts, but it's really surprisingly good. Just an advice.
I think the iOS 7 jailbreak has been literally just released, however it may be another hoax, so don't take my word for it.

If all else fails, try to see if you have any weird file installed on Cydia. Some files gets left behind when uninstalling tweaks or mods, and they are often the main reason for crashing or lagging.
