If i uninstall and then reinstall itunes will i lose anything on my iphone?

I can't back up my phone as every time i connect it to itunes it says i need to restore it and when i click restore it says i can't. And i want to back it up. Can i uninstall and reinstall to solve this problem? Or will i lose anything at all on my iphone? (not just music.contacts and texts and photos etc too)

or can i make a new account and sync my phone with it as if it's the first time i've ever synced it? Would that work or screw it up?

Alright so I use 25pp to sync the minecraft app to my iphone, the app works great, but it crashes regularly sometimes I try to open the app. This morning, my safari tab ( the one on the bottom ) disappeared, so I restarted my iphone and then tried to turn on the minecraft app. IT WON'T OPEN!
