Neither, both are bad phones. I have the 7plus but I had the four plus for three years before I upgraded. Don't waste your money on the new iPhones stick with your 7plus

The 8 may look almost identical to a 7 but beneath the skin it's effectively an iPhone X without the OLED screen and without the flaky facial recognition technology, but at a lower price.

Neither phone really does anything important that your 7 can already do. But if for some compelling reason you feel like you have to splash the cash then go for the 8 as your current phone will still fetch a large proportion of its original purchase price if it remains in excellent condition and has the original box and accessories. That makes changing to an 8, particularly if it's a fairly new but secondhand example with the balance of the AppleCare warranty, a much lower cost upgrade.

The X is simply way overpriced for what it is and uses some technologies which are still causing Apple users too many problems. Faulty screens which black out keep getting reported, far too many users are reporting that the facial recognition is very glitchy and so they have to keep going back to entering their six-digit PIN, and it's been demonstrated a few times now that the facial ID system can be fooled by masks, contrary to what Apple claimed, or just by others picking up the phone and holding it in front of the sleeping user's face. That is even easier to do and less of a gamble than randomly selecting one of ten fingers on a sleeper and trying to press it to the phone without waking them.

The X is too much of a gamble right now. Wait a year or two until Apple have sorted out the technology. Better still, save a load of money and keep your 7 another year or so: it looks like an 8 and does most of what an 8 can do to the same standards.

Between the 8 Plus & X, definitely the X.
But if you are fine with your 7 Plus, may as well hold onto it.

It is expected that Apple would extend the X's design to all their offerings next year, so if you at least want its design in a cheaper phone, that would be the way to go.
