Photos I deleted over a year ago are now appearing in Recently Deleted folder? I'm confused?

Hi- so my iPhone 6 Plus (which, FYI, I can't stand- I miss my 5), anyways it's been a nightmare. It acts like its five heras old on its last leg, yet I've only had it a year. Anyways, I woke up this morning and went to take a picture of my kids, and all of a sudden every picture from my camera roll and every other album deleted (? Very strange?). Thankfully I upload my photos to my computer in an album in itself NOT related Apple whatsoever, so I'm not too worried about losing the photos. However, the strange part is this- I always keep my recently deleted photos album empty because it takes up space. It was empty last night. When I turned my phone back on after my phone started deleting everything, there were photos in my recently deleted album that were deleted A YEAR AGO. I'm SUPER confused. When I go to my photos now it says "restoring" and is putting all these deleted photos back into my folder… I thought once they deleted from recently deleted, they were gone? Am I missing something? Why is my phone acting this way? Do I need to log on to my iCloud on my computer and delete them there? Any info is greatly appreciated! I'm kind of done with Apple- too much hassle. When I delete something, I want it gone. I guess I'll be ordering a Galaxy or something next. Haha

If you are trying to restore then you are restoring from your backup, so yes any photos you had backed up you are now restoring. If you want a galaxy then get one, I personally don't care what you use.
