This might seem surprising, but jailbreaking doesn't always slow down your phone. There's an adding called speed intensifier that changes animation speed. Once this has been installed you can get a Winterboard theme aller speed intensifier addon. This theme literally over clocks your phone. Doing this definitely affects battery life as Apple only allows that clock speed to be run when the iPhone is connected to A/C power.
Another way to speed up your phone is to remove some apps or music or videos/photos. The phone, like all computer, uses the hard drive as secondary memory. The less space there's available on the hard drive the longer it takes to clear and assign memory. By making more space you put less strain on the RAM and hard drive and the phone will run a lot smoother.
