What cables do I need to run the audio from my IPhone 8 Plus to my home stereo?
A stereo patch cable with the headphone plug on one end and a pair of RCA plugs on the other.
It depends on what ports are available on your stereo. If there's an AUX jack (In) on the stereo then one suggestion;
Get a lightning to 3.5mm headphone jack (link 1 below) and from there connect a male to male AUX cord from the jack to the stereo. (link 2 below)

Alternatively, you can run an AUX to RCA splitter (Link 3). Whichever you choose you will need the lightning to 3.5mm jack though.

Have fun!
Depends on the home stereo.
The iPhone 8 came with an adapter that goes from USB-C/Lighting to 3.5" stereo (female) because it does not have an in-built 3.5mm headphone plug. If you don't have that, then that is part #1.
Part #2 will be something that connects the 3.5mm (female) stereo connector to the stereo.
Option 1 for part #3 would be a cable that is 3.5mm stereo (male) to a cable that has the connectors for whatever compatible inputs the "home stereo" has. Some have no inputs; others have RCA afew have 1/4" or 3.5mm stereo audio inputs.
Option 2 uses the iPhone's Blue Tooth connecting to a third party Blue Tooth receiver (I have one from Case Logic). The 3.5mm female headphone out connects with a 3.5mm stereo (male) to a cable that has the connectors for whatever compatible inputs the "home stereo" has. With this option, the Lightning adapter (part #1) is not needed (it was replaced by the Blue Tooth - wireless - connection).
There are a couple of other possibilities - these are the most common and similar to connecting your iPhone's audio to a car system when the car system has no "auxiliary" (USB or 3.5mm) audio input.
If you buy the cheap but excellent media streamer which LIDL sell every few months for about £25 and connect that using the supplied patch cables to a spare home stereo input then your iPhone can connect to it wirelessly, using either your home Wi-Fi network or directly via Bluetooth.
Other media streamers are available and do exactly the same. They also give you access to thousands of internet radio worldwide and the common music streaming sites like Spotify, Deezer. Apple Music, and similar.
Other than that, you'd need an Apple Lightning to 3.5mm stereo plug cable and then plug into the headphone socket on your stereo. Or use the Apple Lightning to headphone adapter and then use a 3.5mm male to male stereo cable (i.e. 3.5mm stereo plugs at both ends).
