What does the 's' mean when comparing iPhone 5 and 5s?

It is just the version of the iPhone. It doesn't make it special or anything.

There's no true definition for the S in 5S. People have called it speed, special, super, seven (for 7th gen iPhone), or even security (the fingerprint scanner), but Apple hasn't seemed to come out with it.

The difference between the 5 and 5S though is that the 5S is faster, has a slightly better camera, comes in a couple of different color choices, and has the fingerprint scanner. Other than that, it's not all that different than the iPhone 5 right now.
