It's like computer, when are you running "hard" programs or games it heats, same with the phone

It's mainly because your streaming or have too many apps open that are streaming. When you stream, it's consider like downloading something for a long time. IPhones have great durabilities but don't let it heat too long. When you hear online, your streaming. When offline, your only using the amount of data that was downloaded for that particular app. A large amount of data the app has offline, can also overheat. Think of the iPhone as a computer, it runs the same way. Hope this helps or make sense.

I also put it to charge last night and when I woke up, the back was, again, extremely hot. I was afraid it would catch on fire or something.
