Yes, it'll show whatever happened on the phone before the SIM card was removed.
iPhones don't really store anything on the SIM card; the card basically just provides the telephone number, nothing else. The iPhone does not view the SIM card as storage media.
Address book entries, texts, e-mails, photos, whatever: they all stay on the iPhone.

If I buy an iPhone from an individual, can I take it to AT&T and have them give me a smaller sim card & transfer my information? Would I have to pay extra for it? Is it even possible?
