Around 13-14gb worth as much 2-3gb will be used by the operating system and stock apps. As for how many apps that is, impossible to say as some apps are like 100mb others can exceed 1gb.
If you don't put a bunch of video and music on it then it can hold alot. I have probably 20 on mine and its not even close to half full and I have 16 gig iphone 6S

16GB on just apps? Difficult to say how many because they vary on size but its a decent size for most people.
Around 4 to 5 GB and If you need some good security program do install LEO Privacy Guard 3.0.
