You can start by making a list of the things an iPhone simulator has to be able to do.

Since it's an introductory class, you should ask your teacher for help about what to download.
If you were taking a biology course and you had to dissect a frog, they would give you the frog -- it's not up to you to go outside and find one.
Is this a somewhat introductory programming course or advanced computer science studies? If the former then you don't have the skill set necessary to emulate the iPhone. If the latter then you should know that Xcode already includes iOS emulators.
The best thing to do would be to use Android as this is open source. You can program this as much as you want and simulate an iPhone.
Do you mean like a homescreen with clickable icons? Surely you aren't building a program that can run iOS apps in an introductory class?
