It is complicated but they can get Vodafone or whoever you are with to trace every message you sent and every number you called or called you
In most cases the phone will be seized only to prevent you from using it, and to verify that it is they device they believ it to be. Once they've verified that it is the deivce they believe it to be they will be able to obtain your call history (regular calls and SMS texts) from your service provider.
