Can I turn my iPhone off whilst it's downloading ios7?
I've began to download ios7 and can I turn my phone off or do I need to leave it on?

No you can't. When I was working in a telecom company, there are customer's having issues when they updated their phone's iOS through Wi-Fi on the phone and the phone suddenly run out of battery. They'll have to connect the phone to a computer then iTunes to continue the update.
