How do I create a video (like stop motion animation) using only pictures I took with my phone?

So I'm trying to make a stop motion animation type video, I have a couple thousand pictures that I would like to convert to a frame by frame video. I have access to adobe programs, and anything that Windows has to offer, as well as my iPhone. So my real question is this: How do I convert these photos to a frame by frame to a video?

Photoshop CS6 added video to its feature set. Once you create a timeline you can drag the photos en masse into it, and adjust the frame rate (default is 5 seconds per photo, you probably don't want that). Here's a quick lesson:
