How come sometimes when I plug in my iphone charger it will spark?

I think it depends on where the line cycle is when you plug the charger in. Remember that the power coming out of a wall socket is a 60Hz AC sine wave. This means the voltage swings up to about 170V, down to 0V, and then to -170V, 60 times a second. If at the instant your charger makes contact with the line, the voltage is close to 0, you probably won't see a spark. If the voltage happens to be close to 170V, a spark can occur.
Your Iphone charger has a switching power supply in it, which has a rectifier and capacitors to change the AC into DC and smooth it out before making the proper voltage for to charge your phone. These caps will be discharged if the charger has been unplugged for a long time. And if there happens to be a lot of voltage on the line, the voltage will try to charge the caps up to this voltage very quickly, which takes a lot of current. And so you will get a spark.
