HOW TO RETRIEVE DELETED IPHONE MESSAGES
I don't want to delete any settings/ data when retrieving:/ I didn't set up a iCloud backup either.

It might be difficult to retrieve all messages. You can try one thing though. Get a software called EaseUS iPhone Recovery and try that one. You might be able to get few messages.
