When you get the new phone, there's a software hook-up that does it all FOR you. I was worried to - and then got is all done in minutes. I would most definitely BACK UP that 5S on your computer AND on iCloud first, though!
Use iTunes to backup your 5s. Then use iTunes again to restore to your 6s. Many apps will not restore, but you can simply download them again to the new phone without having to pay for them again.
Sync everything to your icloud account and you should get almost everything back.
Backup the 5s, then restore the backup to the 6s.
Back up the 5s
Restore from that back up on 6s
