Older manual backup from iTunes should work.
That would depend on if you had a backup somewhere. If not, then not much could be done. Most people store their backups on iCloud though.

- I just got an iPhone 7 and I forgot the passcode so now I can't finish setting up? It can't connect to iTunes and it's not on my iCloud? I feel so dumb for forgetting it, I'm always bad with remembering numbers. Even though I just put it in, I can't remember it. I really don't want to call Apple Support if I don't have to. How could I factory reset it or something? I just got the phone and didn't even finish setting it up yet so there's no data that I'm concerned about. It can't connect to my iTunes or anything like that.
