There's a spot that says deleted notes when you go to your notes… But I don't know if you have it. If you do check there.

Check iCloud or iTunes for a whole-phone backups. Your "updated" note has already been synced, but if your backup dates to before the moment you erred you might get the note back by restoring the backup. However, that undoes everything else you were doing since then too.

At the top of your notes, there's a back button. Press it, and there should be a folder called "Recently Deleted." Recover it from there.
