I need a way to see who and what my girlfriend is texting. IPhone?
I know there are a lot of sights that "offer" exactly this but I want one someone had experience with. And I can't get to her phone

I guess you meant sites. Sights are things to see, like the Golden Gate Bridge, etc…
Do you really believe that those sites would tell you who your Girlfriend is texting? That's pretty ridiculous if you think so. If it were true, what would stop me from reading your text messages?
See? It doesn't work that way. The cell carrier most likely keeps a log of messages, but they won't show them to you unless you work for law enforcement and have a search warrant, which you most likely don't.
Unless you can get physical access to her phone, you can't see her messages.
