If I plug my iPhone into another computer?
That doesn't have iTunes just to charge, does that make my data available for people to see when they use that computer?

Yes it does, but only when your iPhone is connected to the computer. When you disconnect it, it doesn't leave any traces. Think of it as a usb stick.
