Well it depends.
If you had your phone on a financing agreement and stop paying, your carrier will blacklist the phone (and your credit will be affected negatively) and you no longer will be able to use that phone on any carrier until you payback what you owe.
If you had a pre-paid plan, then I suppose you could go to Boost and see if they accept it, but of course, your iPhone needs to have been unlocked in order for that to work.
