It's not so much the number of videos as it is time: on my school issued iPad the 1080p recording option uses about 130 MB (megabytes, 1024 in a gigabyte) per minute. So, if you record at 1080p30, you can record just under 15 and a half hours of video (assuming that rate is accurate.) The 720p30 option on my iPad uses about 70 MB a minute, which would allow you to record about 28 and 3/4ths hours of video. I'm not sure if this is accurate for your device, but hopefully this helps.
That depends on how long the videos are as well as the quality. There isn't a set amount of videos you can record. You can record one very large video or many small videos.
You could use the estimates in the camera settings to work out how much time approximately you could record with that amount of space.
