In the UK can you use Apple Pay in any stores which accept contactless payments?

I've only just added my card to Apple Pay on my new iPhone 6S, so haven't had chance to try it out yet. But I've noticed in some shops they have signs saying they accept Apple Pay, while other shops just have signs saying they accept contactless payments (which I assume they mean cards). I was wondering if Apple Pay will work in any stores which accept contactless payments, or does the store have to specify that they accept Apple Pay for it to work?

The majority of contactless locations will accept Apple Pay under <£30, select stores can do Apple Pay > £30, staff are fairly clueless if you say Apple Pay so ask for contactless and just go ahead with it. Www.contactless.life has some good details on where does.
