IPhone stolen, the thieves are using my stuff
A few months ago, my phone was stolen. I was able to change my passwords on my social networks and email. But the email was the only one that didn't auto logout. So they were/are using my notes and deleting my own that I have saved. How do I get my email off of that phone? Please and thank you!

You need access to your iCloud/iTunes to remotely erase your phone.
You can't do anything about that. You said it was months ago so by now whoever probably wiped the device and or sold it to someone else so it may not be a concern anymore. You should be able to check your email & see if it is being used to email people you don't normally do.
In future though should you get another iPhone the Find my iPhone app is critical.
If it is an iPhone and you have set up find my iphone in icloud on the device before, go to https://www.icloud.com/...cloud.com/ in your web browser. When you log in, Find My iPhone will immediately begin trying to locate your phone if it is online. If it does not work, it is better for you to contact your service provider and phone provider and see if they can help. To prevent your new idevice from being stolen or lost in the future, I suggest you apply some free anti-theft apps like iLostFinder except set up Find My iPhone/iPad/iPod in iCloud on the device. It will take pics of the thief or finder when she/he tries to open your device with a wrong pass and then send the pics to your email etc. Hope it helps.

- I have a stolen iPhone 5c but I didn't know it was stolen? I bought an iPhone and checked the imei and I found out it was stolen. I can't use it yet because it is stuck in the beginning where it says " please insert a sim card, SIM required" I just want to use it as an iPod since I got it for a good cheap price. It is a sprint phone, and also if I take it to Apple or Sprint will they take the phone away? I didn't know it was stolen and I don't want to get blamed or end up losing money. The iPhone was restored already.
