Iphone texting apps for iphone 4?

I was told if iphone plan was shut off with verizon that you can still use the phone as you would an ipod if you have Wi-Fi. I know i can download a texting app. I was just wondering how those work. Which texing app is the best one? And do you pay monthly for unlimited texting?
