It's definitely encrypted. Facetime would be the hardest to intercept unless you are a government agency. IMessage would also be very difficult to intercept, but if someone gained access to your iTunes password they may be able to look at historical or deleted iMessages in some circumstances which is how these celebrity hacks happen.
